Ingredients:
- 1 Tortilla
- 1/2 Avocado, mashed
- 1/4 Cup Montry Jack Cheese (or Sharp Cheddar) (or really any kind of cheese you prefer)
- 1/4 Cup Bell Peppers (any color)
- 1 TBSP Olive Oil
Directions:
- In a nonstick pan over medium-high heat, pour in the olive oil
- Sautee the peppers until they are soft to the touch and set aside
- On a plate, lay the tortilla flat and spread the mashed avocado over the entire tortilla
- Add the cheese and sauteed peppers to one side of the tortilla
- Fold the tortilla in half (you should have a half-moon shape)
- Spray the pan with non-stick cooking spray and heat over medim heat
- Place the filled tortilla in the pan
- Allow to cook until the bottom is golden brown and then flip the tortilla over and repeat (about 3-5 minutes on each side)
- Slice the quesadilla into triangles and top with any remaining avocado or cheese
