I’m super weird about salads. I love salad but I hate dressing. I don’t know why, I just do. The other day I was at lunch with some of my friends and one of them had a really delicious looking salad. So I snuck a bite and guess what? The dressing on it was actually really good. I basically spent that whole afternoon in my kitchen trying to recreate the tangy but sweet lemon vinaigrette. I didn’t get it exactly right, but I loved what I created and then topped off a delicious salad with this dressing so I thought I’d share it with you guys!
Ingredients:
- For Salad:
- Arugula
- Strawberries
- Pecans
- Blue Cheese
- For Dressing:
- ¼ Cup Lemon Juice
- ¼ Cup Olive Oil
- A pinch of Dijon mustard to thicken
- 2 Tsp Minced Oregano
- 1 Minced Garlic Clove
- ½ Tsp Sugar
- ¼ Tsp Black Pepper (to taste)
- ¼ Tsp Salt (to taste)
- If you used bitter lemons, add in a little bit of honey to taste
Directions:
- Cut, wash, and dry the arugula and place in a bowl.
- Chop the strawberries and add to the bowl.
- Chop the pecans and add to the bowl.
- Stir all the dressing ingredients together in a small mixing bowl.
- Allow the dressing to sit for at least 15-30 minutes, and mix again right before you serve.
- Drizzle the dressing over the salad and sprinkle blue cheese on top.
- Enjoy!
