In case you haven’t realized by now, Summer is definitely my favorite season. I feel like recently all my posts have been summer themed and that makes me soo happy. Last week I decided that my regular dinners were way too boring to be the perfect Summer meal. So I decided to make them a little more interesting by adding (healthy) ice pops as dessert. I am in love with this recipe. It’s super easy and it’s great to help beat the heat. I also love these as a little dessert after a hardcore workout or as a pick-me-up after a long day at the beach or something like that!
Ingredients:
- 4 cups pineapple
- ⅗ cup (or just a little more than ½ cup) or blueberries
- small amount of water (sorry idk how much - I usually base it of of taste)
- ¼ cups lime juice
- a pinch of salt
- ice pop molds (can be either the set or just cups and wooden popsicle sticks)
Directions:
- Put all the ingredients (except water) in a blender and blend until smooth
- Strain and taste - add a pinch of water until you achieve your desired taste
- Reblend making sure it’s completely smooth
- Pour an equal amount into the popsicle molds (makes about 8) and freeze for 45 minutes
- Take out molds and put in the stick part and freeze until solid (about 3 hours)
- Run warm water over the molds to release the ice pop
- Enjoy!
Ok so this is my healthy blueberry/pineapple ice pop recipe. I am actually obsessed with this! I’ve been on such a blending and freezing kick lately and I think this may be a holy grail. Now if only I could find an ice pop recipe that people won’t judge me for eating for breakfast…… OMG! I could freeze a green smoothie. TTYL - I’m gonna go do that RN. I’ll keep you updated!
