Hey guys!
Today, I’m going to show you guys how to make super cute pies for the 4th of july. *Disclaimer: This recipe is based off the mini pies in the martha stewart pies and tarts cookbook.
For the filling, you will need…
- Shortbread pie crust (I posted this recipe last week. Check it out here: (www.shadowandgloss.com/2015/05/shortbread-pasta-frolla-pie-crusts.html)
- 8 cups of fresh fruit (I used a mix of blueberries and strawberries)
- 1 cup of granulated sugar
- the juice from 2 lemons
-¼ cup cornstarch
For the egg wash…
- 2 egg yolks
- 2 tablespoons heavy cream
Then, mix the fruit with the cornstarch. Mix the fruit around until it’s evenly covered with cornstarch and let it sit for 2 minutes. Doing this will stop the juices from coming out of the fruit. After, mix the, lemon juice and sugar into a bowl.
Pour the fruit mixture into the pie dish, and start cutting out your top layer. To make this a 4th of July cake, I cut out enough stripes (with a pizza cutter) to fit the entire pie, and then used about 7 stars (using cookie cutters) on ⅓ of the pie. Using an egg wash, brush a little onto the ends of the stripes to make them stay. Then brush the egg wash all over the back of the star and place on top of the stripes.
I cooked this for about 45 minutes, or until a golden brown color at 350℉.
