Did you see the title of this recipe? This dessert is basically a match made in heaven for me. I love caramel and I just discovered last Thanksgiving that pecans are delicious (Sorry Jop! (she's allergic)). These bars are loaded with an oatmeal cookie crust, a chocolate layer, an ooey-gooey caramel layer, and topped off with more crumbled oatmeal cookie crust. These bars are heavenly - even my mom who doesn't like caramel loves them. Trust me on this one guys, these are a must bake. (Recipe adapted from My Baking Addiction)
Ingredients:
- 2 cups all-purpose flour
- 2 cups old fashioned oats
- 1 tsp baking soda
- 1/2 tsp salt
- 1 1/2 cups packed light brown sugar
- 1 1/4 cups butter, melted
- 1 tsp vanilla extract
- 1 cup semi-sweet chocolate chips
- 1 1/2 cup chopped pecans
- 40(ish) individually wrapped caramels, unwrapped
- 5 TBSP heavy cream
Directions:
- Preheat the oven to 350°F.
- Line a 9x13 inch baking pan with foil, leaving an overhang for easy removal. Spray the pan with non-stick cooking spray and set aside.
- In a medium bowl, combine the flour, oats, baking soda, salt, and brown sugar.
- Add in the melted butter and vanilla extract. Stir to combine.
- Press half the mixture into the bottom of the prepared pan to form the crust.
- Bake the crust for 8 minutes.
- Meanwhile, in a medium saucepan, melt together the caramel and heavy cream, stirring occasionally until smooth.
- Remove the crust from the oven and sprinkle with chocolate chips and pecans.
- Pour the caramel mixture over the top.
- Crumble the remaining crust mixture on top.
- Place the pan back in the preheated oven for 15-17 minutes.
- Remove the pan and allow the bars to cool to room temperature.
- Cut into squares and serve. These will also store beautifully in an airtight container in the fridge or air temp. Just bring to room temperature before eating.
