Ingredients:
- 2 tortillas
- 1 tbsp olive oil
- 1 sweet potato, peeled
- 1 tsp chili powder
- 1/2 tsp cumin
- 1/4 cup water
- 1/2 cup Monterey jack (or sharp cheddar) cheese
- 1/2 cup black beans
- 1/2 cup spinach
Directions:
- Chop the sweet potato into small cubes and place in a pan with the olive oil over medium-low heat. Add the chili powder and the cumin and combine. Add the water to the saucepan and cover. Allow to cook until the sweet potato is tender, about 8 minutes. Lightly mash the sweet potato. Right before the sweet potatoes are done, add the spinach and mix together.
- On each of your quesadillas add a layer of cheese, a layer of sweet potato + spinach mixture, and a handful of black beans.
- Cook each quesadilla on each side until golden brown, 3-5 minutes, over medium-low heat.
- Serve the quesadilla warm with any extra cheese or sweet potato mixture on the side!
