Day After Thanksgiving Breakfast Hash

We spend so much time and energy planning Thanksgiving dinner, that we can often forget about the next morning. After a full day of cooking, entertaining, and eating, no one really wants to wake up early to make a big breakfast. Today I thought I would share a recipe for Thanksgiving Breakfast Hash, using any leftovers from your Thanksgiving meal!


Ingredients:
  • 3 cups cooked, shredded/torn, turkey 
  • 2 cups leftover mashed potatoes or roasted potatoes 
  • 2 cups chopped veggies (green beans, peppers, peas, onions,... whatever you have available)
  • 2 cloves garlic 
  • Salt + pepper to taste 

Directions: 
  • Place a large skillet over medium heat. 
  • Add the turkey, potatoes, veggies, and garlic to the skillet.
  • Stir often until heated through (about 5-8 minutes). If you're using mashed potatoes, break up the pieces as they heat up and they will form hash-brown like potato bits. 
  • Add salt and pepper to taste.
  • Serve hot and enjoy! 

OK, so I know this seems like a ridiculously easy recipe, and that's because it is! This is super customizable, add in any random leftovers you have! Let me know what your favorite combos are, I'd love to hear them!
